Ingredients

  • 1/2 cup canned coconut milk
  • 1/2 cup ground flax seed
  • 1 teaspoon cinnamon
  • 2 medium apples, cored and sliced into 1/2-inch wedges

Method

  1. 1Preheat oven to 350°F and line baking sheet with parchment paper.
  2. 2Add coconut milk to one bowl.
  3. 3Add flax seed and cinnamon to second bowl and stir to combine.
  4. 4Place apple wedges into coconut milk in batches if needed and toss to coat evenly.
  5. 5One wedge at a time, press each side into flax mixture.
  6. 6Gently tap off excess coating and transfer to prepared baking sheet.
  7. 7Repeat with remaining apple wedges.
  8. 8Bake for 20-24 minutes, carefully flipping halfway through, until apples are tender.
  9. 9Let apple wedges cool slightly on pan before serving.
