Ingredients
- 1 3/4 cups chickpea flour
- 1/4 cup nutritional yeast
- 1 teaspoon baking powder
- 1 1/4 teaspoons sea salt
- 1 teaspoon smoked paprika
- 2 cups water
- 1 orange bell pepper, chopped
- 2 cups baby spinach, chopped
Method
- 1Preheat oven to 375°F and line muffin tray with paper liners or use silicone muffin tray.
- 2Whisk together chickpea flour, nutritional yeast, baking powder, salt, and smoked paprika in large bowl.
- 3Add water to dry ingredients and whisk until smooth batter forms.
- 4Fold chopped bell peppers and spinach into the batter until evenly distributed.
- 5Let batter rest at room temperature for 15-20 minutes.
- 6Divide batter evenly between muffin cups, about 1/3 cup per muffin.
- 7Bake 35-45 minutes until muffins are golden brown and cooked through.
- 8Cool in tray for 10 minutes before removing and serving warm.
