Ingredients

  • 1 3/4 cups chickpea flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon baking powder
  • 1 1/4 teaspoons sea salt
  • 1 teaspoon smoked paprika
  • 2 cups water
  • 1 orange bell pepper, chopped
  • 2 cups baby spinach, chopped

Method

  1. 1Preheat oven to 375°F and line muffin tray with paper liners or use silicone muffin tray.
  2. 2Whisk together chickpea flour, nutritional yeast, baking powder, salt, and smoked paprika in large bowl.
  3. 3Add water to dry ingredients and whisk until smooth batter forms.
  4. 4Fold chopped bell peppers and spinach into the batter until evenly distributed.
  5. 5Let batter rest at room temperature for 15-20 minutes.
  6. 6Divide batter evenly between muffin cups, about 1/3 cup per muffin.
  7. 7Bake 35-45 minutes until muffins are golden brown and cooked through.
  8. 8Cool in tray for 10 minutes before removing and serving warm.
