1 salmon fillet with kale

Ingredients

  • 7 cups fresh kale leaves chopped
  • 1/2 cup red onion sliced thin
  • 2 tbsp extra virgin olive oil divided
  • Sea salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 12 oz salmon fillet

Method

  1. 1Preheat air fryer to 375°F.
  2. 2Combine chopped kale, sliced onion, 3/4 of the oil, salt, pepper and garlic powder in large bowl.
  3. 3Mix thoroughly with hands to coat kale evenly.
  4. 4Add seasoned kale and onion to air fryer basket.
  5. 5Cook 7-10 minutes, tossing every few minutes, until kale becomes crispy.
  6. 6Remove crispy kale from air fryer and set aside.
  7. 7Increase air fryer temperature to 400°F.
  8. 8Rub salmon with remaining oil and season with salt and pepper.
  9. 9Place salmon in air fryer and cook 7-9 minutes until flaky and cooked through, timing depends on fillet thickness.
  10. 10Divide crispy kale mixture and salmon evenly between plates.

Keep crispy kale in sealed container at room temperature up to 3 days, refrigerate salmon in sealed container up to 3 days
Serving Tips
Each portion includes 1 piece salmon and approximately 1 3/4 cups kale
