Ingredients

  • 2 small blood oranges
  • 1/4 cup chia seeds
  • 1/2 cup unsweetened coconut yogurt
  • 1 tablespoon pistachios, roughly chopped

Method

  1. 1Peel half the blood oranges and chop them, set aside for garnish.
  2. 2Juice the other half of oranges, set juice aside and discard juiced orange.
  3. 3In medium bowl, combine chia seeds with coconut yogurt and orange juice.
  4. 4Whisk well to combine and refrigerate for at least 20 minutes or overnight to thicken.
  5. 5Divide evenly between bowls or containers.
  6. 6Top with chopped orange and pistachios.
