Ingredients

  • 3 tbsp tomato paste
  • 1/3 cup water
  • 2 tbsp taco seasoning divided
  • 1 lb boneless skinless chicken breast
  • 2 tbsp extra virgin olive oil
  • 1 medium lime juiced
  • Sea salt and black pepper to taste
  • 1 medium red bell pepper sliced
  • 1 medium green bell pepper sliced
  • 1 medium yellow onion sliced
  • 8 oz cheddar cheese shredded

Method

  1. 1Mix tomato paste, water and half the taco seasoning in small bowl and set aside.
  2. 2Combine chicken, olive oil, lime juice, remaining taco seasoning, salt and pepper in large bowl.
  3. 3Heat large skillet over medium temperature and add seasoned chicken.
  4. 4Cook chicken 6-8 minutes per side until done, then remove and let rest 5 minutes before slicing.
  5. 5Preheat oven to 425°F.
  6. 6Add bell peppers and onion to same skillet and sauté 8-10 minutes until tender.
  7. 7Return sliced chicken to pan with vegetables.
  8. 8Pour prepared tomato sauce over mixture and stir to combine.
  9. 9Top evenly with shredded cheddar cheese.
  10. 10Transfer skillet to oven and bake 6-8 minutes until cheese melts.
  11. 11Divide cheesy fajita mixture evenly between plates.
