Ingredients
- 3 tbsp tomato paste
- 1/3 cup water
- 2 tbsp taco seasoning divided
- 1 lb boneless skinless chicken breast
- 2 tbsp extra virgin olive oil
- 1 medium lime juiced
- Sea salt and black pepper to taste
- 1 medium red bell pepper sliced
- 1 medium green bell pepper sliced
- 1 medium yellow onion sliced
- 8 oz cheddar cheese shredded
Method
- 1Mix tomato paste, water and half the taco seasoning in small bowl and set aside.
- 2Combine chicken, olive oil, lime juice, remaining taco seasoning, salt and pepper in large bowl.
- 3Heat large skillet over medium temperature and add seasoned chicken.
- 4Cook chicken 6-8 minutes per side until done, then remove and let rest 5 minutes before slicing.
- 5Preheat oven to 425°F.
- 6Add bell peppers and onion to same skillet and sauté 8-10 minutes until tender.
- 7Return sliced chicken to pan with vegetables.
- 8Pour prepared tomato sauce over mixture and stir to combine.
- 9Top evenly with shredded cheddar cheese.
- 10Transfer skillet to oven and bake 6-8 minutes until cheese melts.
- 11Divide cheesy fajita mixture evenly between plates.
