Ingredients

  • 1 cup unsweetened coconut yogurt
  • 1/2 cup smooth cashew butter
  • 2/3 ounce collagen powder
  • 1 teaspoon vanilla extract
  • 1/2 cup diced strawberries
  • 1/2 cup chopped almonds
  • 1 1/2 cups dark chocolate chips
  • 1 1/2 tablespoons coconut oil

Method

  1. 1Whisk together coconut yogurt, cashew butter, collagen powder, and vanilla in a bowl.
  2. 2Line baking sheet with parchment paper.
  3. 3Spoon about 3 tablespoons of mixture onto parchment and shape into circles.
  4. 4Insert popsicle stick into each circle and cover stick with mixture using spoon.
  5. 5Press diced strawberries and chopped almonds into each pop.
  6. 6Freeze for 2 hours until completely solid.
  7. 7Combine chocolate chips and coconut oil in double boiler or microwave in 30-second intervals until melted.
  8. 8Remove pops from freezer and dip each one completely in melted chocolate using spoon or spatula.
  9. 9Return to parchment paper and freeze for additional 15-20 minutes until chocolate sets.
