Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup coconut butter
  • 1 lemon, juiced and zested
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon stevia powder

Method

  1. 1Arrange paper baking cups on a plate or small baking sheet and set aside.
  2. 2Set up double boiler by filling medium pot with inch of water and placing smaller heat-safe bowl on top.
  3. 3Ensure water doesn't touch bottom of bowl and bring to boil, then reduce to lowest heat.
  4. 4Add coconut oil and coconut butter to smaller bowl and allow to melt.
  5. 5In separate small bowl, combine lemon juice, vanilla, and stevia powder, stirring until stevia dissolves.
  6. 6Add lemon mixture to melted coconut mixture and stir well to combine.
  7. 7Stir in lemon zest to taste.
  8. 8Divide mixture between paper cups and transfer to freezer.
  9. 9Allow to set for 30 minutes or until solid, then transfer to airtight container.

Keep fat bombs in freezer up to 1 month, will melt at room temperature
