Ingredients

  • 2 ears corn on the cob, husk removed
  • 10 oz boneless skinless chicken breast
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • Sea salt and black pepper to taste
  • 2 heads romaine hearts, chopped
  • 1/4 cup Caesar dressing
  • 1/4 cup Parmigiano Reggiano, shaved

Method

  1. 1Preheat grill to medium heat.
  2. 2Place corn on grill and cook 15-20 minutes until lightly charred, turning occasionally.
  3. 3Meanwhile, combine chicken with lemon juice, oil, garlic powder, salt and pepper in bowl.
  4. 4Add chicken to grill and cook 6-7 minutes per side until cooked through.
  5. 5Let chicken rest 5 minutes before slicing.
  6. 6Cut kernels off cob and add to large bowl.
  7. 7Add grilled chicken, romaine, dressing and cheese and toss to combine.
  8. 8Divide chicken salad evenly between bowls or plates.

Store in airtight container for up to 3 days, add dressing when ready to serve;.

About 2 cups salad and half cup chicken per serving;.
Dairy-Free
Use plant-based caesar salad dressing and plant-based cheese alternative, or omit cheese.
