Hazelnut Chocolate Truffles

Ingredients
- 6 ounces dark chocolate, chopped
- 3/4 cup canned coconut milk, full fat
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- 3/4 cup hazelnuts, finely chopped and divided
Method
- 1Place chopped chocolate in a heatproof bowl.
- 2Warm coconut milk, vanilla, and salt in a saucepan over medium heat.
- 3Bring mixture to a simmer then remove from heat.
- 4Pour the heated coconut milk over chocolate and cover with tea towel for 5 minutes.
- 5Remove towel and stir until well combined and chocolate is completely melted.
- 6If chocolate hasn't melted completely, microwave for 10-15 seconds in intervals.
- 7Fold in half of the chopped hazelnuts and mix well.
- 8Cover tightly with plastic wrap and refrigerate for 2-3 hours until mixture hardens.
- 9Place remaining hazelnuts on a plate.
- 10Scoop truffle mixture and form into balls, about 2 tablespoons in size.
- 11Roll each ball in chopped hazelnuts then return to refrigerator for 15-20 minutes to set.
