Hazelnut Chocolate Truffles

Ingredients

  • 6 ounces dark chocolate, chopped
  • 3/4 cup canned coconut milk, full fat
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
  • 3/4 cup hazelnuts, finely chopped and divided

Method

  1. 1Place chopped chocolate in a heatproof bowl.
  2. 2Warm coconut milk, vanilla, and salt in a saucepan over medium heat.
  3. 3Bring mixture to a simmer then remove from heat.
  4. 4Pour the heated coconut milk over chocolate and cover with tea towel for 5 minutes.
  5. 5Remove towel and stir until well combined and chocolate is completely melted.
  6. 6If chocolate hasn't melted completely, microwave for 10-15 seconds in intervals.
  7. 7Fold in half of the chopped hazelnuts and mix well.
  8. 8Cover tightly with plastic wrap and refrigerate for 2-3 hours until mixture hardens.
  9. 9Place remaining hazelnuts on a plate.
  10. 10Scoop truffle mixture and form into balls, about 2 tablespoons in size.
  11. 11Roll each ball in chopped hazelnuts then return to refrigerator for 15-20 minutes to set.
