Herb Pistachio Crusted Cod with Creamy Sweet Potato Mash

1 cod fillet with sweet potato
Ingredients
- 2 cod fillets
- Sea salt and black pepper to taste
- 2 tbsp pistachios chopped
- 2 tbsp fresh parsley chopped
- 1 tsp extra virgin olive oil
- 1/2 lemon juiced and zested
- 2 small sweet potatoes peeled and cubed
- 1/3 cup reduced fat cow's milk
Method
- 1Preheat oven to 400°F and line baking sheet with parchment paper.
- 2Season cod fillets generously with salt and pepper and place on prepared baking sheet.
- 3Combine chopped pistachios, parsley, oil, lemon juice and lemon zest in bowl.
- 4Mix pistachio mixture well and spoon evenly over cod fillets, spreading across tops.
- 5Bake 12-14 minutes until cod is cooked through and flakes easily with fork.
- 6Meanwhile add cubed sweet potatoes to pot of salted water.
- 7Bring water to simmer over medium-high heat, then reduce heat and cook 8-10 minutes until fork-tender.
- 8Drain sweet potatoes and return to pot.
- 9Add milk and season with salt and pepper.
- 10Mash potatoes to desired consistency.
- 11Divide mashed sweet potatoes and cod evenly between plates.
