1 cod fillet with sweet potato

Ingredients

  • 2 cod fillets
  • Sea salt and black pepper to taste
  • 2 tbsp pistachios chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp extra virgin olive oil
  • 1/2 lemon juiced and zested
  • 2 small sweet potatoes peeled and cubed
  • 1/3 cup reduced fat cow's milk

Method

  1. 1Preheat oven to 400°F and line baking sheet with parchment paper.
  2. 2Season cod fillets generously with salt and pepper and place on prepared baking sheet.
  3. 3Combine chopped pistachios, parsley, oil, lemon juice and lemon zest in bowl.
  4. 4Mix pistachio mixture well and spoon evenly over cod fillets, spreading across tops.
  5. 5Bake 12-14 minutes until cod is cooked through and flakes easily with fork.
  6. 6Meanwhile add cubed sweet potatoes to pot of salted water.
  7. 7Bring water to simmer over medium-high heat, then reduce heat and cook 8-10 minutes until fork-tender.
  8. 8Drain sweet potatoes and return to pot.
  9. 9Add milk and season with salt and pepper.
  10. 10Mash potatoes to desired consistency.
  11. 11Divide mashed sweet potatoes and cod evenly between plates.
