Ingredients

  • 3 large red bell peppers halved with seeds removed
  • 1 tbsp extra virgin olive oil
  • 2 garlic cloves minced
  • 1 lb medium shrimp peeled and deveined
  • 1 cup cauliflower rice
  • 1/4 cup fresh basil leaves chopped
  • 1/3 cup cottage cheese
  • Sea salt and black pepper to taste

Method

  1. 1Preheat oven to 400°F and place bell pepper halves skin-side down in baking dish.
  2. 2Heat oil in skillet over medium temperature and sauté garlic 30 seconds until fragrant.
  3. 3Add shrimp to pan and cook 2-3 minutes until pink and cooked through.
  4. 4Transfer cooked shrimp to cutting board and let cool slightly before roughly chopping.
  5. 5Mix chopped shrimp, cauliflower rice, basil and cottage cheese in bowl.
  6. 6Season shrimp mixture generously with salt and pepper.
  7. 7Fill bell pepper halves evenly with shrimp mixture.
  8. 8Bake 25-30 minutes until peppers are tender and filling is heated through.
