Ingredients

  • 2 large green bell peppers halved with seeds removed
  • 1 tsp extra virgin olive oil
  • 8 oz extra lean ground turkey
  • Sea salt and black pepper to taste
  • 1/2 cup diced tomatoes from can with juices
  • 1/2 tsp Italian seasoning blend
  • 1 garlic clove minced
  • 4 oz mozzarella cheese shredded and divided
  • 1 oz pepperoni sliced and divided
  • 2 tbsp black olives sliced and divided

Method

  1. 1Preheat oven to 375°F and arrange bell pepper halves in baking dish.
  2. 2Heat oil in large skillet over medium temperature and add ground turkey.
  3. 3Cook turkey 5-7 minutes until completely cooked through, breaking up as it cooks and season with salt and pepper.
  4. 4Stir in diced tomatoes, Italian seasoning and minced garlic.
  5. 5Simmer mixture 5 minutes until liquid evaporates completely.
  6. 6Remove from heat and mix in most of the cheese, pepperoni and olives, reserving small amounts for topping.
  7. 7Fill each pepper half evenly with turkey mixture.
  8. 8Top each stuffed pepper with remaining cheese, pepperoni and olives.
  9. 9Cover with foil and bake 15 minutes, then remove foil and bake additional 15 minutes until peppers are tender and cheese is golden.
  10. 10Divide evenly between plates.
