Lemon Herb Shrimp with Asparagus and Cauliflower Rice

Ingredients

  • 10 oz shrimp peeled and deveined
  • 1 1/2 tbsp extra virgin olive oil divided
  • 1 tsp Italian seasoning blend
  • Sea salt and black pepper to taste
  • 2 cups asparagus spears trimmed
  • 2 cups cauliflower rice thawed
  • 1/4 cup vegetable broth
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped

Method

  1. 1Toss shrimp with 1/3 of olive oil, Italian seasoning, salt and pepper in bowl until evenly coated.
  2. 2Heat large non-stick skillet over medium heat and add half remaining oil with asparagus.
  3. 3Sauté asparagus 3-5 minutes until just tender then remove from pan and set aside.
  4. 4Add remaining oil to same pan with cauliflower rice.
  5. 5Cook cauliflower rice 4-6 minutes until tender, stirring throughout, then remove and set aside.
  6. 6Add seasoned shrimp to pan and cook 1-2 minutes per side until cooked through.
  7. 7Pour in vegetable broth and lemon juice and simmer 1 minute to reduce sauce slightly.
  8. 8Divide asparagus, cauliflower rice and shrimp evenly between plates.
  9. 9Drizzle with any remaining pan sauce and season with salt and pepper.
  10. 10Top with fresh parsley.
