Loaded Bell Pepper Nachos with Ground Beef

Ingredients

  • 4 large red bell peppers cut into thick slices
  • Sea salt and black pepper to taste
  • 1 lb extra lean ground beef
  • 1 small yellow onion diced
  • 2 tbsp taco seasoning blend
  • 8 oz cheddar cheese grated
  • 1/2 cup fresh cilantro chopped
  • 1 cup salsa
  • 1 cup guacamole
  • 1 lime cut into wedges

Method

  1. 1Preheat oven to 425°F and line baking sheet with parchment paper.
  2. 2Add sliced bell peppers to baking sheet and season with salt and pepper.
  3. 3Place in oven and cook 10 minutes.
  4. 4While peppers bake, heat large skillet over medium temperature.
  5. 5Add ground beef and break up as it cooks.
  6. 6Add diced onion and taco seasoning and cook 8-10 minutes until beef is browned and cooked through.
  7. 7Spread cooked ground beef and onion mixture evenly over roasted peppers.
  8. 8Top with grated cheese and return to oven 5-10 minutes until cheese melts.
  9. 9Top with fresh cilantro and divide nachos, salsa, guacamole and lime wedges evenly between plates.
