1 salmon portion with shrimp and vegetables

Ingredients

  • 1 1/2 cups cherry tomatoes halved
  • 1 medium zucchini chopped
  • 1/4 cup pitted kalamata olives halved
  • 2 garlic cloves finely chopped
  • 1 tbsp fresh thyme leaves
  • 2 tbsp extra virgin olive oil divided
  • Sea salt and black pepper to taste
  • 6 oz salmon fillet cut into portions
  • 4 oz shrimp peeled and deveined

Method

  1. 1Preheat oven to 400°F and line baking sheet with parchment paper.
  2. 2Combine halved tomatoes, chopped zucchini, olives, garlic, thyme, half the oil, salt and pepper in bowl and toss to coat.
  3. 3Spread vegetable mixture on prepared baking sheet.
  4. 4Make space on one side of baking sheet for salmon and shrimp.
  5. 5Brush salmon and shrimp with remaining oil and season with salt and pepper.
  6. 6Bake in oven 12-15 minutes until vegetables are tender and salmon and shrimp are cooked through.
  7. 7Divide vegetables, salmon and shrimp evenly between plates.
