Ingredients
- 1/2 cup almond butter
- 1/4 cup coconut oil
- 3 tablespoons cocoa powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/8 teaspoon stevia powder
Method
- 1Arrange paper baking cups on a plate or small baking sheet and set aside.
- 2Set up double boiler by filling medium pot with inch of water and placing smaller heat-safe bowl on top.
- 3Ensure water doesn't touch bottom of bowl and bring to boil, then reduce to lowest heat.
- 4Add almond butter and coconut oil to smaller bowl and allow to melt, stirring to combine.
- 5Stir in cocoa powder until well mixed.
- 6In separate small bowl, combine vanilla, peppermint, and stevia powder, stirring until stevia dissolves.
- 7Add vanilla mixture to almond butter mixture and stir well to combine.
- 8Divide chocolate mixture between paper cups and transfer to freezer.
- 9Allow to set for 30 minutes or until solid, then transfer to airtight container.

Keep in freezer up to 1 month, will melt at room temperature
