1 salmon fillet with salad

Ingredients

  • 10 oz salmon fillet
  • 1 tablespoon extra virgin olive oil, divided
  • Sea salt and black pepper to taste
  • 3 cups kale leaves, chopped
  • 1/2 medium lemon, juiced
  • 1 cup cooked cannellini beans

Method

  1. 1Preheat oven to 400°F and line baking sheet with parchment.
  2. 2Place salmon on prepared baking sheet and drizzle with half the olive oil.
  3. 3Season salmon with salt and pepper.
  4. 4Bake for 12-15 minutes until salmon flakes easily.
  5. 5While salmon cooks, combine kale, lemon juice, remaining oil, salt and pepper in bowl.
  6. 6Massage kale mixture by hand until leaves are softened.
  7. 7Fold in white beans and mix gently.
  8. 8Plate kale salad and top with cooked salmon.

Keep salmon and salad separate in refrigerator for up to 3 days;.

About 2 cups salad with 1 piece salmon per serving;.
