Power Green Salad with Grilled Chicken and Hazelnuts

2 1/2 cups salad with chicken

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 lb boneless skinless chicken thighs
  • Sea salt and black pepper to taste
  • 4 cups fresh kale leaves stems removed and chopped
  • 1 1/2 cups frozen edamame thawed
  • 2 small apples chopped
  • 1/2 medium avocado cut into cubes
  • 1/2 cup hazelnuts chopped
  • 1/4 cup green goddess salad dressing

Method

  1. 1Heat oil in skillet over medium temperature.
  2. 2Season chicken thighs generously with salt and pepper.
  3. 3Place seasoned chicken in hot pan and cook 6-8 minutes per side until cooked through.
  4. 4Remove chicken from pan and let rest 5 minutes before slicing.
  5. 5Divide chopped kale, edamame, apples, avocado and hazelnuts evenly between bowls or plates.
  6. 6Top each salad with sliced chicken and green goddess dressing.

Storage
Keep refrigerated in sealed container up to 3 days, add dressing when ready to eat

No Green Goddess Dressing
Use your favorite dressing instead
No Hazelnuts
Use other chopped nuts or seeds instead.
