Pressure Cooker Thai BBQ Pulled Pork Salad

1 cup pork with 2 cups salad

Ingredients

  • 1/3 cup water
  • 2 tbsp tomato paste
  • 2 tbsp tamari sauce
  • 1 medium lime juiced
  • 1 tsp Chinese five spice blend
  • 2 tsp Thai red curry paste
  • 1 tbsp rice vinegar
  • 1 tsp fish sauce
  • 1 1/2 lbs boneless pork shoulder cut into large chunks
  • 9 leaves romaine lettuce chopped
  • 1/3 cup fresh cilantro chopped
  • 1/2 large red bell pepper chopped

Method

  1. 1Whisk together water, tomato paste, tamari, lime juice, Chinese five spice, curry paste, vinegar and fish sauce in pressure cooker.
  2. 2Add pork chunks and mix to coat thoroughly.
  3. 3Set pressure cooker to sealing and cook on high pressure 45 minutes.
  4. 4Allow pressure to release naturally when cooking is complete.
  5. 5Remove cooked pork leaving liquid in pot.
  6. 6Shred pork with two forks and spoon about half the cooking liquid onto shredded pork.
  7. 7When ready to serve divide chopped lettuce, pulled pork, cilantro and bell pepper evenly between plates.
  8. 8Drizzle with additional sauce as desired.

Storage
Keep pork separate from salad in refrigerated containers up to 3 days

Each portion includes approximately 1 cup pulled pork and 2 cups salad

Add sliced cucumbers or shredded carrots to salad
