Ingredients

  • 7 oz flank steak
  • Sea salt and black pepper to taste
  • 2 teaspoons extra virgin olive oil
  • 1/2 cup cooked black beans
  • 1/2 medium lime, juiced
  • 2 large whole wheat tortillas
  • 1/2 cup guacamole
  • 2 oz mozzarella cheese, shredded

Method

  1. 1Pat steak dry and season generously with salt and pepper.
  2. 2Heat oil in cast-iron pan over medium-high heat.
  3. 3Place steak in pan and cook 8-10 minutes until desired doneness, flipping halfway through.
  4. 4Remove steak from pan and let rest 5 minutes before slicing.
  5. 5Combine black beans, lime juice, salt and pepper in bowl.
  6. 6Lightly mash bean mixture with fork.
  7. 7Lay tortilla on flat surface.
  8. 8Divide mashed beans, sliced steak, guacamole and cheese evenly between tortillas.
  9. 9Roll tightly into burrito, tucking in sides as you go.
  10. 10Heat nonstick pan over medium-low heat.
  11. 11Place burritos in pan and cook 3-4 minutes until lightly browned on all sides.
  12. 12Remove from pan and slice in half.
