Ingredients
- 7 oz flank steak
- Sea salt and black pepper to taste
- 2 teaspoons extra virgin olive oil
- 1/2 cup cooked black beans
- 1/2 medium lime, juiced
- 2 large whole wheat tortillas
- 1/2 cup guacamole
- 2 oz mozzarella cheese, shredded
Method
- 1Pat steak dry and season generously with salt and pepper.
- 2Heat oil in cast-iron pan over medium-high heat.
- 3Place steak in pan and cook 8-10 minutes until desired doneness, flipping halfway through.
- 4Remove steak from pan and let rest 5 minutes before slicing.
- 5Combine black beans, lime juice, salt and pepper in bowl.
- 6Lightly mash bean mixture with fork.
- 7Lay tortilla on flat surface.
- 8Divide mashed beans, sliced steak, guacamole and cheese evenly between tortillas.
- 9Roll tightly into burrito, tucking in sides as you go.
- 10Heat nonstick pan over medium-low heat.
- 11Place burritos in pan and cook 3-4 minutes until lightly browned on all sides.
- 12Remove from pan and slice in half.
