Ingredients

  • 2 3/4 ounces dark chocolate
  • 2 teaspoons coconut oil
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons hemp seeds

Method

  1. 1Line plate or baking sheet with parchment paper.
  2. 2Fill medium pot with inch of water and place smaller heat-safe bowl on top.
  3. 3Ensure water doesn't touch bottom of bowl and bring to boil, then reduce heat to low.
  4. 4Add chocolate and coconut oil to double boiler and stir occasionally until completely melted.
  5. 5Remove bowl from double boiler and stir in all seeds.
  6. 6Mix well until seeds are completely covered in chocolate.
  7. 7Transfer chocolate and seeds to prepared parchment paper and spread into even layer.
  8. 8Place bark in freezer for about 30 minutes or until solid.
  9. 9Once solid, break into pieces and store in airtight container.

Refrigerate in airtight container up to 2 weeks or freeze up to 3 months

One serving equals approximately 1/4 cup of bark

Add sea salt or vanilla extract

Use chopped nuts instead of seeds.
