Ingredients

  • 4 eggs
  • 1/2 tsp garlic powder
  • sea salt and black pepper to taste
  • 1/4 medium acorn squash (seeds removed, sliced thinly)
  • 1/3 cup red onion (sliced)
  • 1/4 cup feta cheese (cubed)

Method

  1. 1Preheat oven to 350°F (175°C).
  2. 2Whisk eggs, garlic powder, salt, and pepper together in bowl.
  3. 3Arrange sliced acorn squash, red onion, and cubed feta in oven-safe pan or baking dish.
  4. 4Pour whisked egg mixture over arranged vegetables and cheese.
  5. 5Bake 20-25 minutes until eggs are set and golden brown on top.
  6. 6Cool briefly before slicing and serving.
