Ingredients
- 10 oz top sirloin steak (cubed)
- 3 tbsp extra virgin olive oil (divided)
- 2 tbsp balsamic vinegar
- sea salt and black pepper to taste
- 1 large sweet potato (cubed)
- 2 tsp Italian seasoning
- 1 large yellow bell pepper (diced)
- 1 small yellow onion (diced)
- 2 stalks green onion (chopped)
Method
- 1Preheat oven to 400°F (205°C) and line baking sheet with parchment paper.
- 2Combine cubed steak, 1/3 of the olive oil, balsamic vinegar, salt, and pepper in a bowl.
- 3Cover and marinate on counter for 30 minutes.
- 4Toss sweet potato cubes with remaining oil and Italian seasoning on baking sheet.
- 5Spread in single layer and roast 20-25 minutes until browned and fork-tender, tossing halfway.
- 6Heat cast-iron pan over medium-high heat while potatoes cook.
- 7Add marinated steak with all juices to hot pan.
- 8Cook 2-3 minutes per side until cooked to desired doneness, then remove and set aside.
- 9Reduce heat to medium and add diced bell pepper, yellow onion, salt, and pepper to same pan.
- 10Add splash of water if needed and sauté 6-7 minutes until softened.
- 11Return cooked steak and roasted sweet potatoes to pan.
- 12Mix to combine and cook 2-3 minutes more.
- 13Divide into bowls and garnish with chopped green onion.
