1 cup chicken, 1 cup sweet potato, 1/2 cup spinach, 2 eggs

Ingredients

  • 4 oz chicken breast
  • 1 small sweet potato (sliced)
  • sea salt and black pepper to taste
  • 2 tsp extra virgin olive oil (divided)
  • 2 cups baby spinach
  • 2 large eggs (whisked)

Method

  1. 1Preheat oven to 400°F (205°C) and line baking sheet with parchment.
  2. 2Arrange chicken and sweet potato slices on prepared baking sheet.
  3. 3Season with salt, pepper, and drizzle with half the olive oil.
  4. 4Roast 15-20 minutes until chicken is fully cooked, then slice chicken.
  5. 5Heat remaining oil in a skillet over medium heat.
  6. 6Sauté spinach 1-2 minutes until wilted, season with salt and pepper, then remove.
  7. 7Add whisked eggs to the same pan and scramble continuously until fluffy.
  8. 8Arrange chicken, sweet potato, spinach, and eggs in a bowl or plate.

Eggs best enjoyed fresh, other components can be refrigerated in airtight container up to 3 days
