Ingredients

  • 1 medium sweet potato
  • 1 medium avocado
  • 1/2 lime (juiced)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp sea salt (plus more for garnish)
  • 1/2 cup watermelon radish (sliced)
  • 2 stalks green onion (chopped)

Method

  1. 1Trim pointed ends from sweet potato and lay flat on cutting board.
  2. 2Slice lengthwise into 1/4-inch thick slices.
  3. 3Toast sweet potato slices 2-3 times in toaster until tender (or broil in oven 3-6 minutes per side).
  4. 4While sweet potato cooks, mash avocado with lime juice, garlic powder, onion powder, and salt.
  5. 5Arrange toasted sweet potato slices on serving plate.
  6. 6Spread mashed avocado mixture evenly over each slice.
  7. 7Top with watermelon radish slices and chopped green onion.
  8. 8Finish with a sprinkle of salt before serving.
