Balsamic Sirloin & Sweet Potato Hash

Ingredients

  • 10 oz top sirloin steak (cubed)
  • 3 tbsp extra virgin olive oil (divided)
  • 2 tbsp balsamic vinegar
  • sea salt and black pepper to taste
  • 1 large sweet potato (cubed)
  • 2 tsp Italian seasoning
  • 1 large yellow bell pepper (diced)
  • 1 small yellow onion (diced)
  • 2 stalks green onion (chopped)

Method

  1. 1Preheat oven to 400°F (205°C) and line baking sheet with parchment paper.
  2. 2Combine cubed steak, 1/3 of the olive oil, balsamic vinegar, salt, and pepper in a bowl.
  3. 3Cover and marinate on counter for 30 minutes.
  4. 4Toss sweet potato cubes with remaining oil and Italian seasoning on baking sheet.
  5. 5Spread in single layer and roast 20-25 minutes until browned and fork-tender, tossing halfway.
  6. 6Heat cast-iron pan over medium-high heat while potatoes cook.
  7. 7Add marinated steak with all juices to hot pan.
  8. 8Cook 2-3 minutes per side until cooked to desired doneness, then remove and set aside.
  9. 9Reduce heat to medium and add diced bell pepper, yellow onion, salt, and pepper to same pan.
  10. 10Add splash of water if needed and sauté 6-7 minutes until softened.
  11. 11Return cooked steak and roasted sweet potatoes to pan.
  12. 12Mix to combine and cook 2-3 minutes more.
  13. 13Divide into bowls and garnish with chopped green onion.
