Ingredients

  • 2 tbsp avocado oil (divided)
  • 1 1/4 lbs extra lean ground turkey
  • sea salt and black pepper to taste
  • 2 tsp taco seasoning (divided)
  • 2 small sweet potatoes (chopped into small cubes)
  • 1 medium yellow onion (chopped)
  • 1 medium red bell pepper (chopped)
  • 2 medium avocados (sliced)

Method

  1. 1Heat large skillet over medium heat and add half the avocado oil.
  2. 2Brown ground turkey for 9-10 minutes, breaking apart as it cooks.
  3. 3Season with salt, pepper, and half the taco seasoning, then remove and set aside.
  4. 4Add remaining oil to the same pan and heat until shimmering.
  5. 5Add cubed sweet potatoes and cook 9-10 minutes, stirring occasionally until mostly tender.
  6. 6Add chopped onion and bell pepper to the pan.
  7. 7Season with remaining taco seasoning, salt, and pepper.
  8. 8Cook 8-10 minutes, stirring occasionally, until sweet potatoes are fork-tender.
  9. 9Return cooked turkey to pan and toss everything together to heat through.
  10. 10Divide evenly among plates and top with sliced avocado.
