Ingredients

  • 2 cups rolled oats
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • 2 medium carrots (peeled and grated)
  • 1/4 cup chopped walnuts
  • 2 tsp coconut oil (divided)

Method

  1. 1Blend oats, eggs, applesauce, almond milk, vanilla, baking powder, cinnamon, nutmeg, and salt until smooth.
  2. 2Fold in grated carrots and chopped walnuts.
  3. 3Warm a nonstick skillet over medium-low heat and brush with coconut oil.
  4. 4Pour about 1/3 cup batter per pancake into the heated pan.
  5. 5Cook until bubbles appear on surface, then flip carefully.
  6. 6Continue cooking 1-2 minutes until golden brown.
  7. 7Repeat with remaining batter, adding oil as needed.
  8. 8Serve warm on individual plates.
